The king of the Cajun sausages, andouille (on-DOO-ee) is one of the necessary ingredients for an authentic gumbo. It is much more heavily seasoned and smoked (not spicier) than Smoked Sausage and we stuff it into a larger natural casing. The pork is coarsely ground which adds to its distinctive color and texture. Use it in your favorite bean, gumbo, or pasta recipes to give them that special Cajun smokey kick that everyone loves.
