The long lines at the famous meat market in Schriever are shorter and faster than they were last Christmas season — thanks largely to an expansion — but the list of customers waiting to receive Bourgeois Meat Market's famous Cajun beef jerky is longer than ever.
“Christmas is wild,” said Beau Bourgeois, son of owner Donald Bourgeois. “As soon as the weather gets, cold people start cooking, and we get busy. Something about cold weather makes you want hot boudin.”
