Unlike in Lester’s day, the hog’s heads are no longer used. Our hogshead cheese is made from bone-in pork roasts, onions, green onions, parsley, and Bourgeois seasoning. We don’t add any gelatin. The bone-in pork, once simmered down, provides the necessary gelling effect. Head cheese is usually served cold. For parties it is often served with crackers or for breakfast, it is served on toast or with grits.
