Turkey cheese was our attempt to make a healthier version of Hogshead Cheese. It turned out to be even better and is now wildly popular. We follow the same process as the hogshead cheese but replace all the pork meat with whole turkeys. Again, we don’t use any gelatin and the lack of pork gives turkey cheese a softer, more spreadable texture. Try slicing up a pound or two alongside some crackers as an appetizer for the next game.
